Ingredients

  • 2 pounds of Ground Beef (80/20)
  • Full slab of Pork Belly
  • 1/2 Pound of American cheese
  • 1 pack of Brioche Bread
  • 3-4 tablespoons of AC BBQ Midnight Rub
  • 3-4 tablespoons of AC BBQ MVP Rub
  • 1/2 Bottle of T&T BBQ Momma Pals Mop Sauce
  • T&T BBQ Bree’s BBQ Sauce (to your liking)
  • 3 tablespoons of Ketchup
  • 3 tablespoons of Mayo

Preparation

  • Prepare Pork Belly: Get yourself a whole pork belly and season with AC Barbeque rubs, The MVP & Midnight Smoke.
  • Place pork belly on the smoker at 275 degrees for 3 hours. Mop with Thyron’s Momma Pals Sweet & Spicy Mop Sauce every half hour after the bark has set, until the internal temperature reaches 190 degrees. Wrap in foil and let rest for 2 hours.
  • Cook Burger: Roll a patty into a ball and season over the top with The MVP or any All Purpose Seasoning. Get a piping hot cast iron (or any pan) and add beef tallow or avocado oil.
  • Place the patty ball inside the pan, then pour chopped onions over the top and smash. Let sear for about 2-3 minutes. Flip and smash. Sear for 2 more minutes, add cheese, and let sit for another minute, then remove.
  • Prepare Bun and Serve: Place burger bun in the pan and let it toast in the rendered beef tallow.
  • Place burger sauce on the bottom bun. Place smashed burger & onions on top of the burger sauce, place thick sliced pork belly strips over the smashed burger, then add your favorite BBQ Sauce (like T&T Bree’s Open Pit BBQ Sauce!). Place the top bun on and enjoy!

Thyron Mathews Jr. was born and raised in a small town called Royal, Florida. Thyron Mathews Sr. & Pal Morgan raised Thyron to understand open pit BBQ. Splitting wood, mopping meat & tending to long open pit fires was a part of Thyron’s long list of responsibilities. Thyron learned the intricacy of what would become of his pitmaster career. In 1999, Thyron moved to Fayette, Iowa to attend Upper Iowa University. While attending UIU Thyron met the love of his life, Terrishane. Together, they created their brand, T&T BBQ. Starting out as a hobby for Charity & Church fundraisers, Thyron began to BBQ more often. Dominating BBQ competitions in NorthEast Iowa, Thyron realized how good his BBQ was and decided shortly after to start vending and catering different types of events. Thyron went on to compete on the Netflix series, Barbecue Showdown, as one of 8 contestants. Thyron’s vast knowledge and ability to adapt and overcome helped him become the show's BBQ Champion. Shortly after, Thyron decided to bottle his family’s legacy & share his family’s secrets with the world.
