Ingredients

  • 1 lb.chicken breast
  • 1 lb. boneless skinless chicken thighs diced
  • 1/2 red onion thinly sliced
  • Store bought pizza crust (we recommend the long rectangular version from Trader Joe’s)
  • 8 oz Canned tomatoes
  • 2 tbsp fresh basil
  • 4 tbsp olive oil
  • 3 cloves minced garlic
  • 1 cup AC BBQ All Day or Carolina Gold Sauce
  • 3 tbsp AC BBQ MVP seasoning divided
  • 1-2 cups shredded pepper jack cheese
  • 1-2 cups mozzarella cheese
  • 2 tbsp Boursin cheese
  • 2 tbsp unsalted butter
  • Oil for pan frying

Preparation

  • Rub chicken thighs and breast with MVP seasoning and let it marinate for at least an hour. Preheat oven to 500 degrees.
  • Heat oil in a pan and add your chicken breasts and pan fry. Cook the breasts on both sides for 5-6 minutes adding the butter to baste until fully cooked to an internal temperature of 165 degrees. Next cook the diced chicken thighs for about 7 minutes, also until fully cooked.
  • In a separate small pot, add the canned tomatoes and barbecue sauce. Simmer for about 10 minutes.
  • Parbake your pizza dough for 5 minutes on a pizza stone or baking sheet, then remove from the oven. (This allows the crust to get crispy without the sauce and ingredients making it soggy.)
  • Add the minced garlic and olive oil to a small bowl and mix. Brush the dough with the garlic oil, then top with your BBQ pizza sauce, Boursin cheese, your shredded cheeses, chicken, and red onion.
  • Bake until the cheese melts and the crust gets crispy. To serve, top with more of the garlic oil and fresh basil, and enjoy!
