Lemon Stepper Peanut Butter Chicken

  • 2 boneless skinless chicken breasts
  • Neutral oil
  • Lemon Stepper seasoning
  • ¼ cup peanut butter
  • Juice of 1 lime
  • Minced red chili pepper to taste
  • 1 ½ tbsp minced garlic
  • MVP seasoning
  • 3 cups baby spinach
  • 2 lemons
  • AC Gold sauce


  • Score chicken breasts and drizzle with oil and Lemon Stepper on both sides. Place on a grill heated to 375ºF and close the lid.
  • In a bowl, combine peanut butter, lime juice, chili, 1 tbsp garlic, and a generous amount of MVP and whisk until smooth. Baste sauce over the chicken as it cooks - leave on grill for another 10 minutes until cooked.
  • Heat a skillet on medium heat with a drizzle of oil. Add spinach, the remaining garlic, a dash of Lemon Stepper, and a big squeeze of lemon, and cook until spinach is wilted.
  • Plate the spinach and place the chicken on top. Zest a lime and lemon around the plate. Serve with an additional squeeze of lemon, and a side of chili and AC Gold.
