Ingredients

  • Pork butt
  • 1/2 cup of Worcestershire sauce
  • Lemon stepper rub
  • Light beer of your choice
  • Juice of 2 lemons

Preparation

  • Score fat cap on pork butt. Apply 3-4 tablespoons of Worcestershire sauce as a binder. Season heavily with lemon stepper rub.
  • Place on the smoker and cook until the bark has set. Depending on smoker type and temperature this can take anywhere from 4-6 hours.
  • Place pork butt in a foil pan. Juice 1-2 lemons over the top of the pork. Add 1/4 cup of Worcestershire sauce and one light beer. Cover pork in a pan and place back on the smoker.
  • Cook pork until it is tender and a skewer goes in like butter. Internal temp will be anywhere from 199-206 degrees. Let rest in a cooler or cambro for at least 1 hour before shredding.

Chuck's Flavor Train

From the very start, Chuck Matto ("C-Train" to close friends) has blended his lifelong experiences with his passion for food and love of BBQ to create a ride unlike anything else. In 2016, Chuck was gifted a smoker by his older brother for Christmas – leading him to share his food on Instagram, and from there, the train took off! What started with friends asking Chuck to cater has now turned into his own catering business, becoming a contestant on "Fire Masters" on the Cooking Channel as well as Food Network’s BBQ Brawl, and even having Gordan Ramsay duet one of his videos.
